Mousses légères au citron

Voici un dessert que j’aime réaliser tant sa texture est agréable. J’adore cette mousse légère au citron ( je devrais dire ultra-légère ), d‘un blanc quasi-immaculé, peu sucrée et légèrement acidulée.

Quand vous plantez votre cuillère dans cette mousse au citron, vous entendez un léger crissement comme si vous marchiez dans la poudreuse …puis vient l’impression de manger un nuage ..si,si, un nuage… tellement c’est léger et presque immatériel !!! Mais je ne vous en dis pas plus et vous invite à tester cette mousse au citron .

Juste une chose, si vous êtes plutôt bec sucré, augmentez un peu la dose de sucre ( sinon, pour info, c’est seulement 106 kcal par mousse ! ) . Par ailleurs, le fait de ne pas chauffer le jus de citron permet de conserver une partie de la vitamine C de l’agrume, alors, aucune raison de se priver d’un tel dessert !!!!

Pour 4 personnes: 
(Prep 10 min: réfrigération 3 heures)
Verrines de 25 cl 

  • 1 à 2 citrons 
  • 3 blancs d’oeuf
  • 250 g de fromage blanc à 20% (7,6 %)
  • 50 g de sucre glace
  • 2 feuilles de gélatine ( soit 4 g)
  • Sel
 
Faites tremper les feuilles de gélatine dans un bol d’eau froide.
 
Lavez les citrons et râpez finement le zeste d’un citron. Pressez les citrons de façon à obtenir environ 5 cl de jus de citron. ( Je réserve 1 c à s pour dissoudre la gélatine )
 
Mélangez le fromage blanc avec le zeste et le jus de citron.
 
Dans une casserole, faites chauffer 1 c à s d’eau (+ 1 c à s de jus de citron pour moi ) et faites-y fondre la gélatine bien essorée. Incorporez-la au fromage tout en fouettant ( pour éviter qu’elle ne fige en paquet avec la différence de température ) 
 
Battez les blancs d’oeuf en neige avec une pincée de sel et incorporez le sucre glace pour serrer les blancs.
 
Ajoutez-les délicatement à la préparation précédente, en soulevant la masse à la spatule.
 
Versez cette préparation dans 4 verrines de 25 cl et laissez prendre au réfrigérateur pendant au moins 3 heures. Servez bien frais .

      Comme noté sur la recette, je dissous ma gélatine dans un peu d’eau et de jus de citron chaud; ensuite il faut mélanger rapidement pour que la gélatine ne fige pas dans le froamge balnc froid. Si tu veux, tu peux tiédir tout le jus de citron. Bises
